•4 thinly sliced chicken fillets or "thinly sliced chicken breast (cut into diagonal/diagonal grains) or use veal" scallops"
• cup unbleached all-purpose flour

•1 tablespoon fresh parsley leaves
• salt and pepper to taste
Prepare the meat and pat dry. Combine flour and black pepper in a shallow dish. Dredge the meat in the flour and shake off the excess meat. Lay each cutlet flat and sprinkle with chopped sage. Place the prosciutto slices on top of each cutlet and press gently to adhere, or use a toothpick. Put on hold.
